Darker syrup comes in later in the season. We typically have 4 different grades in a good year.
Early season starts off golden (very light), then amber, then dark, and finally extra dark as the leaves begin to bud out. The taste becomes stronger as the syrup gets darker.
Everyone has their own preference. Personally, I LOVE the light stuff, especially in ice cream and in coffee. Amber for pancakes, darker is great for cooking/baking.
