I haven't looked for any such app on my laptop but I know on my Android phone there is an app that I really like that can do exactly this kind of thing.
It can take in a bunch of images, do some processing on it to handle bad photographs and the like. It also can extract text out of the documents, but thats a bit wonky if you want to copy the text to somewhere else (won't have same formatting). Its call OSS document scanner.
