I guess Faust wanted to prove, that the "life" Mephisto offered was not worth it - they had another wager, that the devil would get his soul in the very moment he found that normie life fulfilling.
He then fucked his trad QT, but left her to pursue other interests - because he was a restless seeker, not someone to settle down into a simple life.
Later - when she was in prison for killing his and her child, he felt pity with her.
But he didn't need to be persuaded because it all was a big experiment for him. He never found any part of the life Mephisto offered fulfilling, and he didn't say the fateful words that would have given him his soul.
