Some day I'll get around to adding thermostatic control to this smoker... at the moment it basically just has a power dial (I assume this is restive, but not sure, could be on/off cycle frequency) which controls AC output that goes from the box on the side into the back of the smoker. You can run the smoker uncontrolled off of AC power so all I need to do is replace that input with one going via a controller. For not I need to tend it frequently.
