It's pretty easy to make authentic Pad Thai in the US.

We cook it at least once a month.

It is a relatively young dish created in the late 1930s, a period of rice shortage and the need of Field Marshal Plaek Phibunsongkhram to create national identity-building campaign.

This was the time, when the name of the country was changed from Siam to Thailand. Thus a new national dish was created.

( Pad Kaprow [fried basil] is the real national dish though )
