Electricity is far easier to generate than most people, and any apocalypse movie ever made, makes it out to be. The problem is batteries. The average rooftop solar panel array generates enough power for you to operate your house indefinitely, the problem is not the yield, but being able to sufficiently store enough energy between sunlight hours.
You could literally take and convert a stationary bike, ride it an hour a day for fitness, and generate enough electricity to keep a couple lights on for the day with a power tool battery.
Very few scenarios would result in mass loss of electricity. If you can't figure out how to generate a few Kw/h a day, you should learn.
