also, for a REALLY nice crispy fry, you could parboil your cut fries for just maybe 3 or 4 minutes, dry them off, chill them, then either toss them in a seasoned flour/sugar coating, or dip them in a thin batter before deep frying. But that's REALLY time consuming. It's only for people who love cooking for people who love eating perfect fried potatoes.
