@aaronsternberg & I Sunday dinner date night, our healthy take on the smash burger:
Local grass-fed beef, caramelized onions, our homemade dill pickles, the best crispy potatoes (recipe below) , Gorgonzola cheese, dijon mustard, Primal sugar free ketchup, and butter lettuces. No bun. Use those hands. 🙌
How to make these best crispy potatoes:
1. Oven at 425F.
2. Boil a pot of salty water, it should taste like the ocean.
3. Wash & cut golden potatoes into roughly 1” cubes. I like to leave the skin on.
4. Cook potatoes in very salty water for 15-20 minutes. Until they soften but not falling apart.
5. Drain water from the potatoes.
6. Add 2T of grass fed ghee to the pot that you boiled the potatoes in. I do not recommend butter or olive oil, both will burn in the hot oven. Return potatoes to the pot and toss to coat in ghee. Some of the potatoes will rub off on each other. This will crisp up in the oven for a delicious crunch.
7. Sprinkle salt and pepper on the potatoes and toss to coat. I like to use a salt, pepper, garlic, onion spice blend.
8. Place the potatoes on a parchment lined baking sheet.
9. Roast them for 20-30 minutes - just until golden on the outside and soft & fluffy inside. You may want to finish them under the broiler for extra crunch.
