'sans-serif' is the default it will fall back to if it can't find any of the others, of course. Maybe that's what's giving you Liberation?
'-apple-system' and 'BlinkMacSystemFont' are special meta-font families designed to render in your OS's preferred fonts, I guess?
In Chrome you can Inspect, go to Computed tab and at the bottom see a panel showing "Rendered Fonts".
