For that dish, concept is that new year brings a mixture of all feelings like happiness, sadness, fear, anger, etc.
So the dish has ingredients that are a mixture of tastes:
Jaggery(sweet), neem flower(bitter), raw mango(tangy), tamarind(sour), pepper(spicy) and salt (umami)
I think in philosophy it may be the closest to Japanese concept of dishes 😅
