Only way to do that is inspecting the source code of bitcoinj, compiling and using it, instead of using the version from JitPack.
Downloading dependencies from popular repositories like JitPack is normal (not saying it's the best practice, but normal).
TBH I did compare that source with an older version I found on noosphere888's GitHub and found the majority of changes were removing old stuff (like BIP70), but cryptography is tricky so I preferred to let that comment out.
