It's not surprising that it would gather that data for support reasons, considering its origins of subscribing supported RHEL systems directly. I agree that data is unnecessary on unsupported Fedora systems. Perhaps if you filed a bug the dev team would consider an off switch?

I'm just trying to show folks how easy it is these days to consume real RHEL in mock and podman. If you don't want to, then don't.
