I guess it depends on how you look at tips or the "tip culture" in different countries. I know that in the US for example people are usually paying $20 and that it's seen as a contribution to the waiters wage.
In the EU the standard is $10 and it's more seen as an appreciation of the service and attention the waiter has given to you and your table. More like a hospitality appreciation I guess. Of course, if the food is shit to start with then no hospitality in the world is going to help with your tips.
Anyway, I've worked catering for almost 30 years and still do it today on the side, during events or at a friends place. It's good and free fiat money. However, I expect my boss to pay the wage and my tips are separate. I wont work for $5 hour because the boss reckons that I'll get 20% tips. I have 30 years experience, you pay for that AND I collect my tips.
But yeah, I'd be pissed if a customer would try to roll over his bill onto my tips. Joke or not. I'd tell him to fuck off. Yes, even if my boss wouldn't appreciate.
