Apparently, Microsoft Teams collects biometric data (voice and face image) of its users to build profiles of them:

The article doesn't say how to turn it off but go to Settings and then Recognition (the last item at the bottom). This is for academic and corporate accounts only - personal accounts (e.g., from Skype) do not have such setting. Dunno if this means that you can't turn it off there.
