Not pasteurized milk get sower, but is still more or less safe for consumption. There are even recipes where sower milk is used.
pasteurized milk however are more likely to get rotten. Even red rot. Very nasty. It takes time but everyone who found an old box of milk in their fridge have seen the horror.
