for Nextcloud Mail (/ maildir) support + encryption Dovecot is my pick. But before that I would use the Proton bridge, with a Proton account configured to receive mail from multiple addresses.
Caveats:
1. The bridge only works on localhost by default - it requires an SSH tunnel to be a general-purpose IMAP server
2. The bridge's IMAP implementation is a bit problematic, especially when it comes to sorting and searching - I've reported the issues to them multiple times, their response more or less was "it's supposed to be a local-only bridge tested with Thunderbird/Outlook/Apple Mail, not a general-purpose compliant IMAP implementation"
3. It's not technically 100% self-hosted - you need to trust Proton (I trust them more than many other tech companies, but that may not be the case for everyone)
If these caveats are ok for you then the Proton bridge may be a good option. Otherwise you probably want a full IMAP implementation - and Dovecot is still the best pick for it.
