Chef John recipes are usually more work than I prefer, but his harira is damned good. (I can’t say how authentic.)
Mostly stuff we keep on hand. Lots of measuring, but and only a little chopping. Not much urgency, just keep tossing stuff in the post as you go.
Can be made vegan pretty easily. We usually use ground pork. Brown your protein and bloom the spices.
We use orzo for the pasta or sub with rice. Pretty much any bean. Very flexible.
So warm and tasty.
