Yes, welcome back to the world of trade-offs. Naturally processed coffees will always have some presence of mold. Chemically treated coffees are less likely to harbor mold or will have less mold present. I'd be reluctant to trust anything that claims to be mold-free at face value. It's likely treated with an inhibitor.
