Thai Combination Rice by Martha Rose Schulman. This one gives me nostalgia for Thailand, especially one food stall close to where we stayed for our visit to the Khao Yai national park... My version is not vegetarian, but it can easily be made even vegan by going with a vegan chili paste and a vegan fish sauce substitute.
