This phone AI update will probably just be turned on by default in one of those updates sent to your phone that you have no choice to install. Then they'll probably make it difficult for most people to find the setting to turn it off.
If I have to start treating my phone like a landline to limit its reach at my choosing, I'll just install a landline and go back to a flip phone for emergencies.
