Unstoppable is a strong word I'd say resilient, but for different reasons than Bitcoin.

With Bitcoin each full node contains the record of all previous transactions that have been broadcast to the network. So one node could reconstitute the blockchain if something happened to all the rest of the network.

With Nostr each relay only contains notes that have been broadcast to it directly. The protocol does not specify cross talk between Relays (though it could happen if a relay operator wanted to). It is possible if you only subscribe to one relay and something happens to that relay for your notes to be lost. But if you subscribe to multiple relays then you are protected because you have backups. Nostr's resilience is twofold; your key pair and the siloed nature of each relay. Provided your key pair is secure you can't be impersonated. Anyone wanting to censor you would have to know all your subscribed relays or intervene physically.
