Unfortunately payee side is pretty rekt anyways no matter what. On the lightning side, on the zap side, etc.
The defaults for receivers should just be: "no public zaps / normal LNURL tipping only". Which will mean no amounts showing at all. When I eventually set LNURL up, I will not be implementing zaps and broadcasting every time someone has given me money... Anon/private zaps don't fix this IIUC because that's sender-side.
The defaults for senders should be on the anon/private side, which ever is better. I don't remember I haven't looked at the spec, whichever does the random key part.
