Had an enjoyable outing to Pier 8 for boiled seafood last week. Brought home leftover potatoes marinating in leftover sauce.
Sliced up and fried potatoes in butter until crispy.
Added a whole bunch of red pepper flakes because, honestly, Pier 8's "fire" heat rating is a bit wimpy.
Added eggs and green onions. Stirred and fried until eggs set.
Poured on leftover sauce.
Ate with a fork. Paired with an Abita Mardi Gras Bock.
A+ will no doubt do it again in a few weeks.
