R&R Milling Co. (Douglassville, TX) Cornbread. Restraunt Recipe.
2/3 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon sugar (optional)
1 egg
1/2 cup milk 1 tablespoon soft butter
Beat well and pour into a heated no. 5 cast iron skillet. Bake at 450 degrees Fahrenheit until brown.
Western style of the above: Use same ingredients as above, and fry 4 slices of bacon, very crisp, and crumple into batter. Also chop 1 medium-size green onion using top and onion and mix into batter. (Onion optional).
Badmann’s Mom preferred:
2/3 cup butter
3 eggs
1 and 2/3 cups milk
2 and 1/3 cups all-purpose flour
1 cup cornmeal
4 and 1/2 teaspoons baking powder
1 teaspoon salt
In mixing bowl: Cream butter. Combine eggs and milk. Combine flour, cornmeal, baking powder and salt; add to creamed mixture with egg mixture. Pour into greased 13 9 2 in baking pan. Bake at 400 degrees F for 22-27 minutes or until toothpick comes out clean. Cut into squares; serve warm.
