Okay so, the excellent folk who staff the Ghost.org support desk helped me figure out that the images I was using on my site were too big for Mastodon.
Have reduced them to 2MB or less in size and now Mastodon displays them perfectly.
Hopefully this is useful for someone else out there and apologies to anyone who has had an edit notification or two from me in the past few minutes.
