I took a mini-vacation to Nova Scotia, Canada, last week and was introduced to "chow chow" (or just "chow".) It's a relish made with green tomatoes, onions, vinegar, spices, etc. I found it a little sweet for my taste, so I would probably cut back on the sugar if I were to try my hand at it. There are lots of recipes online, some for a refrigerator pickle approach and some for canning. Outside of the Atlantic provinces, there are recipes that add other veggies, different spices, etc.
