As for the ‘dregs’ of the flavour packed shiitake and the kombu, I put them back in the saucepan, add four cups of water, bring to the boil and simmer for another 3 minutes to get a nice soup base for curry udon other type of noodle dish.

The shiitake I then chop up to store in the fridge to incorporate into potato salads and so on as ham substitutes, and the kombu I cut into bite sized pieces, boil in a little water and rice vinegar to make into refreshing pickled kombu. Absolutely nothing to throw away! 👍
