I'm still figuring it out, but I think the way water adhesion happens in the standard V60, ie, the flat surfaces of the filter holder (vs the vanes) kinds of "sucks" out a bit of bypass, whereas this open vane design seems, weirdly, to cause LESS bypass, and changes up the brew. Plus it cools down qucker (not much, but still does it) because of the airflow around the outside of the paper filter during brew.
