I think nc will listen for a connection (or in -u mode, for a datagram from a particular source) then once one is received, continue to read from that same logical "socket" (I.e. source address/port tuple). Datagrams from a different source port/address will not be printed after the initial one is received.
If you fix the source port (nc -p 5001 -u 127.0.0.1 5000 for example) for each connection, you'll see them.
