The address would likely just be saved in a client (encrypted), and sent to merchants encrypted with their pubkey (like a DM), so that only they could read it.

That's why I have been saying nostr flips the HTTPS security model (top-down certificate authority) on it's head. You don't need a CA when you're encrypting data directly with the recipients pubkey.
