I think any watch (bluetooth only) that can be used exclusively with Gadgetbridge will be privacy preserving.
Those watches by themselves cannot share any data without the help of their companion proprietary apps. Using a FOSS companion app solves this issue.
I use a Fossil Hybrid and I'm satisfied.
