Occurred to me as a #TipOfDay that many folks might not know that getting a crispy crust on hash brown potatoes works with bacon grease to fry and then weighting them down while cooking. I use the Cuisinart lids to weight them in a regular skillet. About 3 times you turn them to mix. Using the lid helps cook evenly. BTW, thanks to my MIL for showing me to cook with bacon grease and always save a cup in the fridge.
