Busy busy.

A few things going on - first and foremost, need to get my friends who are parents through the next week.

The easy option is gammon, so I've done that - cooked, sliced and delivered.

Second is that we need to provide some variety, so that the kids don't get bored of one type of food.

With that in mind, I'm also roasting two chickens.

Both are sprayed with cooking oil. The one on the right is seasoned simply with salt and pepper; on the left, I've added thyme and some garlic.

This *is not* gourmet stuff - this is "feed a family or two for a week with minimal effort" stuff.

Plan is - the salt and pepper seasoned chicken will be shredded and turned into dishes inspired by Asian or maybe Mexican cuisines, as it should be a fairly neutral base that I can use.

The chicken with the thyme and garlic will be turned into more Mediterranean inspired dishes (after an initial "British Roast" tonight), as I also have a bunch of recipes that use this.
