We got a box of treasure today -- a shipment of 25 lbs of fresh Hatch green chile. Husbear is outside roasting them right now. We don't have a big chile tumble roaster so we use our Weber grill. This involves a lot of turning and roasting and then resting in paper bags and eventually going into freezer bags, 3-4 peppers each. When we want green chile, it's fresh roasted and frozen, we just thaw, peel, seed, and use.
