The fold count refers to the weight of the beens to amount of alcohol ratio. 1oz of beans to 1oz of alcohol is single fold, 2oz of beans to 1oz of alcohol is double fold and so forth.
We have done 15 different experiments with different beans & alcohols. I think every batch has been at least a 2 fold. We are still waiting for lots of these to be done as they take roughly 2 years start to finish unless ya do a "paste". As to what’s best… that’s totally dependent on what you like the best.
If you want something as close to store bought you’re going to want grade 2 light beans and a neutral spirt at a 2 fold.
