"content": "In New Mexico there are two main types of red chile sauce; Chile Caribe and Chile Colorado. The main difference is that Caribe uses only the flesh of the chile and Colorado uses the whole pod. Colorado has a more complex, bitter flavor but can be grainy. It really benefits from long slow cooking so I thought I'd make some in a crockpot.
