Snails are effective carbon capture. Fast-growing plants are all very well, but you need to sequester the biomass somewhere long-term so it doesn't rot down and re-enter the biosphere as carbon dioxide, or ferment and release methane, which is worse.
Feed it to snails. As long as they have enough calcium in their diet, they'll sequester carbonate directly, and we know that stuff hangs around for a while: that's what limestone is.
Proposal: large snail farm with a small garlic farm beside it.
