Well you can get high CRI LEDs and if they were on true DC they wouldn't pulse.
It wouldn't exactly be poe. Maybe have a bunch of standard voltages that the device can select from with a resistor or something.
Point is you can do DC and it would be better and safer than running 120VAC and turning it into heat everywhere.
