Sexy, no. Tasty, heck yeah. Breakfast tostadas with an egg-avocado scramble, refried pinto beans, and spicy enchilada rioja sauce I made.
I don’t deep-fry the “tostadas” — I just rub the tortillas in ghee, put them in a skillet with a heavy pot on them, cook till crisping up, flip, then finish in the toaster oven for 2-3 minutes.
The eggs are scrambled and finished with avocado. It’s got pinto beans cooked with lotsa spice, and my homemade enchilada Rioja sauce. #cooking
