This weekend we're eating leftovers. I found a couple of pork chops in tupperware, diced them nice and tiny...
Then I broke down and strayed onto the path of evil. I threw a spoonful of bacon fat in the cast iron with the diced pork, added some all purpose flour and a goodly shake of Tony Chachere's Cajun Spice, browned it up.
Turned the fire way down and slowly poured in enough whole milk to make up a nice fluffy gravy.
Took it upstairs and ate it all.
