My usual line is "I'll play anything I don't have to breathe into" but mostly bass/guitar (and related things: banjo, mando, oud, lute, etc.), keys, percussion, bits of bowed strings, occasional drums, etc. I've been at it pro- and semi-pro since my teens so there have been lots of weird "hey, can you play this?" moments.
I should note that being able to futz my way through a recording or something is not the same is truly being able to "play" most things. I just fake it.
