I could post a recipe if you want to try it, but I also forgot something I've been making a lot for beef recently is a roasted red pepper and garlic coulis.

And that's pretty simple. It's just roasted red peppers, garlic, some olive oil, lemon juice, salt and black pepper. Really, really bright and tasty.
