Two extremely easy vegetarian / vegan ways to improve your congee or soup noodle base:
- soak a bunch of good dried shiitake mushrooms in warm water for 4 hours, keep the mushrooms and put them in anything; use the mushroom water for making congee or soup
- if you drink tea, especially oolong, pu’erh and green tea, see what happens when you put a few leaves in the soup
All pretty standard ways of making soups in Chinese cooking
