That's the thing, you can't easily "hold off" GrapheneOS (nprofile…nztg) updates, they will be downloaded and installed without user action... The way they deal with updates needs to be addressed asap. Stop auto-updates, and get more testing before releasing them to Stable channel.
My Pixel 9 has been crashing far too often lately, it was fine a month ago, i suspect a bad update went through. I use my phone for everything so i can't risk bad updates.
