You don't need red to create an optical illusion of red.
Our brain creates red because there is a pattern that can make our brains imagine red. This is pronounced because they chose an image containing a red can of soda which satisfies/validates our brain's assumptions. You could do this with a can of Pepsi and it would still be red if the same procedure is followed.
