Indeginous peoples of areas all over the world were one thing before all others. Which is, people. And people, throughout history ve been capable of some pretty horrible things. Of course, other people would then overstate things that they did to make them look bad but many societies don't need total fantasy for that.
In the case of the Aztecs, there is the clear evidence in how other local states were beyond eager to join up with the Spanish because the Aztecs weren't exactly friendly overlords. There also is all the written material, including on the pyramids themselves, that really don't lie.
Human sacrifice also is far from unique. It's something that has occurred throughout the world, including places as diverse as Shang China (all the way up to the Song period where it focused more on widows and had become smaller in scale) to ancient Rome, currently in Uganda, and many, many more places and times. So why would all of the many peoples in the Americas somehow be immune to the idea? Many archaeological finds also support this, even aside from the literary evidence.
Sure, some researchers were racist. There's no denying that and I wish you good luck in finding any scholars in the nineteenth century who we wouldn't consider to be racist in some shape or form. That however doesn't mean that all their findings are somehow tainted or the like. It's also interesting that the debunker who is quoted is specialised in China and later learned Arabic. I can't find anything about the Aztecs there.
