Stock android is a pretty bad experience imo, if you dont want to be subjected to Googles tracking and other shenanigans. They also force their ecosystem on you a great deal.
Big dislike!
I'm currently on GrapheneOS, which I can highly recommend. Easy install, no junk included, no google included unless you choose to, sandboxed google play services.
CalyxOS would be my second choice.
I'm not familiar with eOS, but from their install page, it looks like it is in beta still?
