I don't know how well known this is, but #France has a network of tracks called the DFCI (DĂ©fense des forĂȘts contre l'incendie) to allow access into the forests for the fire service. Cyclists can use them to more or less cross the country without travelling on roads. They're all crushed stone and generally well maintained enough to easily pass with a good mountain bike. I found this fantastic map, maintained by the government, to help with route planning:
