Apple’s Messages is encrypted end-to-end, but iCloud backups of your messages are not by default. They are, along with most of the rest of your data, when you enable Advanced Data Protection. Also consider whether the people you are messaging with _also_ turn it on (or else messages may be recoverable from their end).
Signal is always end-to-end encrypted and doesn’t have backups in this way. Telegram is generally not end-to-end encrypted.
