That would be very cool. I can think of a few problems, though.
It probably violates YouTube's terms of service, if you care about that.
It could violate copyright and licensing limits set by the creator of the video. (Is it possible to search YouTube by license? I don't remember.)
It could copy a VERY large amount of data from YouTube to the Peertube bridge.
